Chef Lauren Daniels is a culinary entrepreneur, community advocate, and founder of multiple food-driven ventures that celebrate Southern hospitality and handcrafted goodness. She began her journey in the kitchen as the creator of Little Chefs In Training, a beloved children’s cooking school that nurtured a generation of young cooks in Fort Myers. From there, Lauren evolved her passion into a full-service restaurant—Southern Charm Bistro & Bakery—known for its comforting Southern classics and warm, welcoming atmosphere.
In her latest venture, Pearl’s Southern Biscuits, Lauren pays tribute to her grandmother, Pearl McIntosh, by bringing handcrafted, all-natural biscuits to grocery store shelves and food service partners nationwide. With signature varieties like Frosted Blueberry, Garlic Cheddar, and Southern Butter, Pearl’s products are rooted in tradition yet made to meet the moment in today’s frozen and fresh retail spaces.
Lauren currently serves as Executive Chef of the iconic Edison Restaurant, Bar, and Banquet Center, located along historic McGregor Boulevard in Fort Myers. Overlooking the Fort Myers Country Club, the Edison honors its namesake with timeless decor, live music, and a menu of elevated American favorites. There, Lauren brings her signature flair to every plate, blending nostalgia, innovation, and culinary excellence.
Driven by purpose, Lauren champions local partnerships, food education, and cultural storytelling through cuisine. Whether developing private label products, hosting tasting events, or creating community-driven menus, she leads with heart, heritage, and hustle.
